Broiled Asparagus with Dijon Dressing


Broil - 5 minutes. Serves 8

Ingredients:

1 lb asparagus, ends snapped
4 T olive oil, divided
1/2 tsp salt, divided
1 lemon, juice and zest, divided
1 tsp minced garlic
1 T Dijon mustard
1/3 tsp dried oregano
1 T toasted pine nuts

Directions:

1. Preheat broiler to high and place rack about 4 inches from heat source. Toss asparagus with 1 T oil and 1/4 tsp salt.

2. Broil asparagus on baking sheet lined with foil for 5 - 7 minutes, until lightly browned in spots.

3. In small bowl, whisk remaining oil, 2 T lemon juice, garlic, mustard, oregano, and remaining salt. Set aside.

4. Sprinkle asparagus with 1/2 t lemon juice, 1/2 t lemon zest, and pine nuts. Serve Dijon dressing along side.

Notes:

Can use lemon juice from bottle, if desired. Fresh oregano substitution: 1 t fresh oregano. Could replace pine nuts with crumbled goat cheese.
