Mom's Tator Tot Casserole


375° - 30 minutes. Serves 4

Ingredients:

  • 1 lb Ground Beef
  • 1 Can Cream Of Mushroom Soup
  • 1 T Milk
  • 1/2 cup Chopped Medium Onion
  • 1/2 cup Shredded Medium Cheddar Cheese
  • Seasoning Salt and Pepper
  • Package of Frozen Tater Tots

Directions:

On stovetop in a skillet, brown ground beef and season with seasoning salt and pepper. Drain fat and add onions. Cook till onions are soft. Pour beef and onion mixture into large casserole dish. Spread out evenly across the bottom. Cover the top with frozen tater tots in rows.

In a bowl, mix cream of mushroom soup with a table spoon of milk. Pour over tater tots. Put in oven for 20 to 25 minutes. Add shredded medium cheddar cheese and bake an additional 5 minutes or until all cheese is melted.


Notes:

To freeze: brown beef and cook onions are directed above. Place frozen tater tots over the beef and onion mixture in casserole dish. Cover with cream of mushroom soup. put shredded cheese in a ziplock bag and tape to the top of the casserole dish lid with baking instructions. Freeze. Baking time may take longer.

Beef and Potato Moussaka

400° - 60 minutes. Serves 8 - 10

Ingredients:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 3/4 cup water
  • 1 can (6 ounces) tomato paste
  • 3 tablespoons minced fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon dried mint, optional
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon pepper
  • PARMESAN SAUCE:
  • 1/4 cup butter, cubed
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 4 eggs, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 5 medium potatoes, peeled and thinly sliced

Directions:

In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the water, tomato paste, parsley, salt, mint if desired, cinnamon and pepper. Set aside.

For sauce, melt butter in a saucepan over medium heat. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Add the Parmesan cheese and salt.

Place half of the potato slices in a greased shallow 3-qt. baking dish. Top with half of the Parmesan sauce and all of the meat mixture. Arrange the remaining potatoes over meat mixture; top with the remaining Parmesan sauce.

Bake, uncovered, at 350° for 1 hour or until potatoes are tender. Let stand for 10 minutes before serving.


Notes:

Not something I would want to make again.

Grandmama Friedokra's Hamburger Casserole

350° - 30 minutes. Serves 4

Ingredients:

1 1/2 lbs. ground beef
1 onion, diced
1 8 oz. can tomato sauce
1/2 pint sour cream
3 oz. softened cream cheese
1 can cream of mushroom soup
grated cheddar cheese
1/2 lb. shell noodles (small or big, your preference)


Directions:

Cook noodles in salted boiling water about 2/3rds of the time on the package directions.

Saute and drain the onion and beef. Stir in the tomato sauce and a little salt and pepper.

In a separate bowl, mix together the cream cheese, soup, and sour cream. Drain noodles and place them in a small casserole dish, followed by the meat and sauce mixture, then the creamy cheese mixture, and top with a hearty layer of grated cheddar.

Bake at 350° for 30 minutes or until bubbly and a little brown on top.

Notes:

Amended sara - try mixing sauce, meat and noodles together before adding chz topping.

Sausage Roll

375° - 45 minutes. Serves 6-8

Ingredients:

1.5 lb sausage
1/2 c red wine
1/4 c Romano cheese, shredded
2 t parsley
1/4 t oregano
1 lb bread dough
2 T melted butter
Spaghetti Sauce
Mozzarella cheese

Directions:

Brown sausage in wine. Simmer 15 minutes. Drain. Stir in Romano, oregano and parsley. Remove from heat.

Roll dough into 16" x 6" rectangle. Spread spaghetti sauce all around leaving 1/2" border at the edges. Sprinkle meat over sauce and press into place. Cover with mozzarella.

Roll dough into a log and pinch seams closed. Brush top with butter. Cook until golden brown, about 25 minutes. Serve warm with remaining spaghetti sauce.

Notes:

Can substitute tomato sauce for spaghetti sauce or hamburger for sausage if desired. Cooking wine works well.

Hamburger Soup

Stovetop - 60 minutes. Serves 8

Ingredients:

1 lb ground beef
5 cups water
1 bay leaf
16 oz cut tomatoes
2 medium onions, chopped
2 medium carrots, sliced
2 stalks celery, sliced
1/3 cup pearl barley or rice
1/4 cup catsup
1 TBSP instant beef bullion granules
2 tsp seasoned salt
pepper to taste
1 tsp basil

Directions:

Brown beef and onion in a Dutch oven, drain well. Add the rest of the ingredients. Bring to a boil, reduce and simmer covered for 1 hour until veggies are tender.

Notes:

Optional ingredients are what you have on hand and feel like:
Fresh or canned corn
potatoes cut small
green beans
anything you have floating around the fridge you want to get rid of.

This soup freezes well and also can be done in the slow cooker after you brown the meat and onions.

Easily doubled.

Super Chili

Stove Top - Serves 8-10

Ingredients:

1 lb ground beef
1 c onion, chopped fine
1 clove garlic, minced
1 can dark red kidney beans, drained and rinsed
1 can light red kidney beans, drained and rinsed
3 eight ounce cans tomato sauce
1 can diced tomatoes
1 package chili seasoning

Directions:

Brown beef until almost done ten add onion and garlic. Continue browning until onion is tender. Add remaining ingredients and simmer till it all gets to know each other - as short as 30 minutes.

Notes:

I like to add extra beans - black beans, white beans, pinto beans, your favorite bean. This stretches the recipe into the 8-10 servings section.

While I use canned beans, you can also use dried beans, just make sure to prepare properly first. Nothing worse than crunchy beans.

You can also substitute your own favorite way to season chili for mine.

Baked Fake Steak with Gravy

350° - 60 minutes. Serves 6 OR crockpot

Ingredients:
  • 1-1/2 pounds ground beef
  • 8-1/2 saltine crackers, finely crushed
  • 1/4 cup milk
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/8 teaspoon ground black pepper
  • 1/2 pinch salt, or to taste
  • 1/4 cup all-purpose flour
  • 1-1/2 teaspoons vegetable oil
  • 3/4 cup water
  • 1/2 (10.75 ounce) can condensed beef and mushroom soup
  • 1/2 (.75 ounce) packet dry brown gravy mix

Directions:

  1. In a large bowl, mix together the ground beef, saltine crackers and milk. Season with garlic powder, onion powder, salt and pepper, and mix until well blended. Line a 10x15 inch jellyroll pan with waxed paper. Press the beef mixture firmly into the pan. Cover with plastic wrap, and refrigerate 8 to 10 hours, or overnight.
  2. Preheat the oven to 350 degrees F (175 degrees C). Remove plastic wrap from meat, and rub flour over the top side of the beef. Flip out of the pan onto waxed paper, and rub flour on the other side as well. Cut into pieces (I use a pizza cutter).
  3. Heat oil in a large heavy skillet over medium-high heat. Fry the meat until browned on each side, turning only once. Remove to a 9x13 inch baking dish. In a medium bowl, mix together the water, condensed soup, and gravy mix. Pour over the meat in the dish. Cover the dish loosely with aluminum foil.
  4. Bake for 1 hour in the preheated oven. Serve fake steak and gravy with potatoes, rice, or noodles.
Slow Cooker

Brown beef, and place in slow cooker with gravy mixture. Cook on low for 5 to 8 hours.


Notes:

Don't let the time scare you. This is an easy, simple and good recipe for using hamburger, or any ground meat. This is good to mix one day and bake the next. Goes well with noodles, rice or mashed potatoes.

Pizza Rice Casserole

325° - 30 minutes. Serves 6

Ingredients:


2 cups cooked brown rice
1 ½ cups cottage cheese
1 lb. sausage or hamburger or a combo of both
1 onion, chopped
1 -14oz can diced tomatoes
1 -8oz can tomato sauce
2 t Italian seasonings
½ t salt
Mozzarella cheese

Optional:
Pepperoni
Black olives, sliced

Directions:

Combine cooked rice and cottage cheese and spread into the bottom of a 9x13 pan. Cook sausage and onions until sausage is done and onions are soft.

Add tomatoes, tomato sauce, Italian seasonings and salt. Spread this over the top of the rice. If you want to use the optional items layer those on top of the sausage/tomato mixture. Top with mozzarella cheese (as much or as little as desired).

Bake at 325 for 30 minutes or until all is bubbly and hot and cheese has melted.

Porcupine Meatballs



Stove Top - 60 minutes. Serves 8

With a family that includes 4 growing children, I’m always on the lookout for a good, inexpensive meal. This recipe combines leftover rice, lean ground beef, and a few spices into a wonderful, belly filling meal for even my most picky eater.

Directions:

2 pounds lean ground beef
1 cup long-grain brown rice (minute rice or leftover works well)
1/2 cup water
1/2 cup onion, chopped
2 teaspoons salt (I use just half this amount with no difference)
1/4 teaspoon garlic powder
1 teaspoon seasoned salt
1/4 teaspoon black pepper
1 15 oz can tomato sauce
1 1/3 tablespoon Worcestershire sauce
1/2 cup water

Directions:

Mix the beef, rice, water, onion, salt, garlic, seasoned salt & pepper all together. Shape the mixture into 1 1/2 inch meatballs. Heat 1 tablespoon olive oil in a large skillet and cook the meatballs over medium heat until browned, turning occasionally; drain off excess grease. Add tomato sauce, remaining 1/2 cup water, and Worcestershire sauce; heat to broiling. Reduce heat and simmer, covered, 35-40 minutes.

I serve this over more rice and spoon up the sauce, too. I add a green salad on the side and sometimes homemade garlic bread and it’s a wonderful meal.


Prep time: 15 minutes
Cook Time: 45 minutes

Mum's Meat Pie

350° - 75 minutes. Serves 6

Ingredients:

1 pound ground beef
1 large yellow onion, diced
2 carrots, diced
1 large potato, diced
1 can diced tomatoes
1 teaspoon (or cube) beef bouillon
1/4 cup water, or more to taste
Ketchup
Worcestershire sauce
Salt and pepper, to taste
1 tablespoon cornstarch
1/4 cup water
Dough for 9-inch, two-crust pie

Directions:

Preheat oven to 350 degrees. In a large skillet over medium-high heat, brown ground beef and drain excess fat. Add onions and sauté for 2 to 3 minutes. Add carrots and potatoes. Cooking, stirring occasionally, for 5 minutes. Add tomatoes, beef bouillon and water. (If you want more gravy add additional water.)
Add one squirt of ketchup and a dash of Worcestershire sauce. Season with salt and pepper. Simmer 30 minutes.
Mix cornstarch with water until dissolved. Add to beef mixture. Simmer until gravy is thickened.
Drain the beef mixture, saving the tomato "gravy" for later.
Roll out half the pie dough about 1/4 inch thick and line a 9-inch pie pan. Fill pie pan with beef mixture. Roll out remaining dough and place on top of meat mixture. Cut off excess pastry by running a knife around the outer edge of the pie plate. Pinch and seal edges of pie.
Bake for 30 to 45 minutes or until crust is golden brown. Remove from oven and let cool slightly before serving. Reheat tomato gravy and serve on the side.

Sweet and Sour Meatballs

350° - 30 minutes.

Sweet and Sour Meatballs

1 egg, beaten

1/4 cup milk

1/2 cup onion

1 pound ground beef or ground turkey

3/4 cup bread or cracker crumbs

1/4 teaspoon pepper

1/4 teaspoon nutmeg or pumpkin pie spice (I use the latter)

In a mixing bowl, combine all ingredients. Blend well. Shape into 1 inch balls and place in a 9*9 sprayed dish. Bake at 350 degrees for 30 minutes, or until hot and bubbly. Add the sauce about 15 minutes into cooking.

Sweet and Sour Sauce

1 cup brown sugar

2 tablespoons cornstarch

2/3 cup red wine vinegar

2/3 cup pineapple juice (I just buy the little flip top cans and use one of those)

2 tablespoons soy sauce

1/2 teaspoon garlic powder

1/2 teaspoon ginger

In a small saucepan, combine only the brown sugar and the cornstarch. Mix thoroughly. Stir in vinegar, pineapple juice, soy sauce, garlic powder and ginger. Cook and stir until thick and bubbly. Pour over the meatballs as they finish cooking in the oven.

Goes well with rice and veggiees.

Crockpot Meatloaf

Ingredients:

2 1/2 pounds ground beef
1/4 cup ketchup
1 tablespoon brown sugar
1 egg
1 cup italian breadcrumbs or crushed crackers
1 tablespoon Worcestershire sauce
1 small onion (diced)
1/4 cup water

Directions:

Mix all ingredients in a large bowl. Form into a meatloaf shape that will fit into your crock pot. Cut a strip of foil and place under the meatloaf in crock pot. Cut it long enough to cover the bottom and sides of meatloaf. Place meat loaf in crock pot and top with an additional 2 tablespoons ketchup & chili sauce. Cover and cook on low for approximately 8 hours or high for four hours.
